Elmer's Craft & Tell Party Recipes Round Up

So, remember the Elmer's Craft and Tell Party from a couple of weeks ago? Well, here's the info on some of the fabulous food as promised!!
 The Spread:
A delicious mix of homemade & store-bought appetizers and desserts! Thanks to all of you who contributed! Everything was wonderful! Here's a round up of the recipes/links I received from our fabulous party attendees:
 
I made queso dip, homemade salsa, and sangria to drink.
Amy, from Pink Bow Bath Boutique, made some delicious buffalo chicken dip! (I forgot to take a picture of hers, so this is mine. But, you can see hers on the left edge of the spread photo!)
Sara, from Super Saving Sense, brought pina colada cupcakes that were SO good! I LOVED the frosting on these cupcakes! And, they were super cute too with the umbrella toppers!
Samantha, from A Little Simplicity, brought a beautiful (and yummy) strawberry trifle! Add some blueberries and star-shaped angel food cake, and you've got a perfect 4th of July dish!
 
And, last but not least, Laura, from Pink Cake Plate, wowed everyone with her cupcake push pops! A few ladies (myself included) even bought some of the containers from her so we could try making them sometime!
Here's the recipe she made this time:


Outrageous Peanut Butter Brownie Push Pops
 - 1 box of your favorite brownie mix for 9x13” pan and ingredients to make the brownies.
 - 1 Cup Vanilla Pastry Pride Topping (frozen) this will whip to 3x’s its amount so 1C will = 3C
 - ½ Cup Chocolate Pastry Pride Topping (frozen)
 - ½ to 1C creamy Peanut Butter
 - Chopped Reese’s Peanut Butter Cups for garnish (I used 9 mini for 12 pops)
Make brownies as directed on package and cool completely.  I used a 2” round cookie cutter and punched out as many brownies as I could! I was able to make about 13 push pops with 3 brownies in each pop!
Whip the vanilla Pastry Pride until stiff peaks form; fold in the peanut butter. I started with ½ C but increased to about 1C, or until it suits your taste! Place in either a zip lock bag and snip the tip, or fill a pastry bag,  and pipe between layers of brownies.
To create the pops I started with a brownie base and then piped a layer of PB mousse and then alternated, ending with a brownie on the top.
Whip the chocolate pastry pride until stiff peaks form and place in either a zip lock bag or fill a pastry bag with a tip.  Pipe the desired amount of chocolate cream on each pop and garnish with chopped Reese’s PB cups!! 
*Note: Pastry Pride is like whipped cream, but non-dairy. This means you can frost or fill a cake with it, and it can sit out for hours. It tastes smooth, creamy, and not too sweet. It can be purchased at cake decorating stores (it will be in a freezer), or at Smart & Final.
