As part of my ground beef freezer cooking I did this week, I made a big pot of my favorite chili recipe. My favorite I'm sure, because it's my mom's! It's how she always made chili and not surprisingly, it's how I've always made chili.
Simple ingredients, just adjust the quantities to however large a batch you'd like to make!
Basic Recipe:
-1lb ground beef
-1 C chopped onion
-1 16oz. can tomatoes (broken up if whole)
-1 16oz can kidney beans (drained)
-1 8oz can tomato sauce
-2 tsp. chili powder
In skillet, brown ground beef with onions. Stir in remaining ingredients. Cover and simmer for 1 hr.
Chili freezes great though, so I make a big batch instead. Here's what my large quantity recipe looked like this time:
- 2lbs ground beef
- 1/2 small onion chopped
- 1 garlic clove (minced)
- 4 16oz cans tomatoes (a couple cans had celery & green peppers in it too)
- 4 16oz cans dark red kidney beans
- 1 16oz can tomato sauce + 1 8oz. can tomato sauce
- chili powder & pepper to taste
Simple & yummy!

ReplyDeleteOooh, just had my husband's chili for dinner tonight - it's such a great choice for this time of year, isn't it? Yours looks much simpler than his but then again, I'd rather make a simpler and less involved chili! ;-) It's his one signature dish so he tends to go overboard.
