Berry Pie

Mmm....pie!!! 
 I thought this time of year was appropriate to revisit the post about my first-ever pie making endeavor (which made it's debut on our family blog last spring)...

When you think pie this time of year, it seems like pumpkin, apple, and cherry are what come to mind.  But, I sooooo love berry pie.  And with this recipe, you can make it anytime because frozen berries totally work fine! Plus, the hint of cinnamon makes it seem a little more Thanksgiving/Christmas-y! 

Here's the SUPER easy recipe that I started with (got it from a friend, so I don't know where it came from):
2-3 cups mixed berries  (used the frozen medly from Costco)
1/2 C sugar
1/4 C flour
1t cinnamon
Bake at 350 for 50 min.

My pie plate was a bit larger (10 inches)and I needed more filling...so, these are my changes:
about 4 cups frozen mixed berries + approx. 1 cup of mulberries (it was the spring, so we had them from the tree--this time of year, just use more berries of your choice)
3/4 C sugar
1/4 C flour, plus an extra tablespoon
1t cinnamon
juice from 1/2 a small lemon

I used store-bought frozen pie crust, but I am sure that the cream cheese dough recipe used for the pumpkin turnovers would be delicious:

-1.5 C unbleached all-purpose flour
-1 t sugar
-pinch of salt
-1 stick cold, unsalted butter (diced)
-1 package cold cream cheese (cut into pieces)

And, here's the finished product...The consistency is perfect and it tastes soooo good!

  1. I am planning on making blueberry {I have some blueberries from this past summer in the freezer :)} and turtle pumpkin pie.

    I've never made a berry pie before and was a little nervous that the blueberry pie wouldn't come out very well. Thanks for your post...you made it sound so easy!

  2. Oh this looks so good. I haven't made a pie yet this season. I need to because my husband loves them. Mine never turn out pretty though. :( But they taste good!
